Salty Bites

Ingredients

1. 1 ½ cups all purpose flour
2. ½ cup suji (semolina flour)
3. ¾ tsp ajwain (grounded)
4. ½ tsp nutmeg
5. 1½ tsp salt or to taste
6. 2 tbsp hot oil
7. Oil for frying










Method:


1. Mix all the dry ingredients then add 2 tbsp hot oil and rub well.
2. With the help of water make a hard dough. Cover it and let it sit for 15 minutes
3. Now make 1 cm. thick roti  (Indian equivalent of a "tortilla") .Cut it in to small squares /fingers or rectangles.
4. On medium heat fry them until they turn golden in colour.
5. Drain them on paper towel. 


6. When completely cooled, store them.








Preparing for Ramadan - Chutneys


I like to do some preparations before Ramadan to save time for Ibadat. I make chutnies,dry snacks and some sweets. One of my favorites which is used in many dishes is "Sweet and sour chutney"

Sweet and sour chutney


Ingredients:
1. 150 grams tamarind (imlli)
2. 400 grams dates
3. 100 grams sugar/gur
4.  2 tsp red chilli powder
5.  ½ tsp black pepper powder
6.  1 tsp cummin seed (zeera)
7.  ½ tsp dry ginger powder(sonth)
8.  1 tsp rock salt(kala namak)
9.  Salt to Taste


Method:

1. Wash and remove seeds from tamarind and dates.
2. Roast cumin seeds and powder it.
3. In the pressure cooker put dates and tamarind add enough water to cover them. Add all the ingredients except salt and cook it for three minutes in a pressure cooker and cool it self.
4. Blend it and strain it, now add both salts.if it is too thick add boiled water to make chutney of a desired consistency.
