Dahi vada

Dahi Vada


1. 200 gms white urad dal (Available at an Indian Store)
2. 50 gms moong dal (Available at an Indian Store)
3. 1 tsp Ginger paste
4. 4 Green Chilies
4. 1/2 tsp Asafoetida (Heeng - Available at an Indian Store)
5. 1 tsp all purpose flour (Maida)
6. Oil for frying
7. 500gms Plain Yoghurt
8. 1 tbsp sugar
9. Salt to taste
10.Sweet Chutney (Recipe posted in an earlier post)


Method


A) Preparation of Green Chili-Ginger Paste


Grind 4 Green Chilies and 1 tsp Ginger Paste. Grind them. Use 1/2 tsp of this paste.


B) Preparation of Vada


1. Soak both Dals(White Urad Dal and Moong) overnight 
2. Grind in a mixer.
3. Leave this batter for 2hrs
4. Beat the batter very well with ginger chili paste(Prepared in Step A)
5. Put Asafoteida,white flour,and salt to taste.
6. Heat oil in kadhai (wok)
7. Make small  patties(called vadas)
8. Fry till golden brown.
9. Once fried put the prepared patties in warm salted water for 20 minutes.
10. Remove patties from water and squeeze it with both palms.Put them in a dish.
11. Beat yoghurt with sugar,spread it over patties(vadas)
12. Sprinkle chilli powser salt,chat masala and sweet chutney.
